2 tablespoons Soya Soya Oil
2 cloves garlic, chopped
1 cup onion, chopped
1 tomato, chopped
2 fish fillets
7 tablespoons spring onion, chopped
1/2 tablespoon garlic and salt seasoning
1 chicken stock cube
3 potatoes, boiled and mashed
42 stuffed green olives
Breadcrumbs
1/2 cup milk
1 large egg
Thread flour for breading
Soya oil for frying
Sauce
1 cup Homemade Soya Mayonnaise
1 tablespoon lemon juice
Lemon zest to taste
In a saucepan, first sauté the garlic and then the onion in the Soya Soya Oil. Add the tomatoes, fish, spring onions, garlic and salt seasoning, chicken stock and sauté until the mixture is dry. Remove from the heat, leave to cool, add the mashed potato, mix well and shape the dough into balls, placing a stuffed green olive in the center of each one. Finish with a dumpling shape.
Sauce: place all the sauce ingredients in a bowl, mix and set aside.
Baking: in a bowl, put the milk and eggs and beat them lightly. Dip the dumplings in this mixture, then in the breading flour and fry them, little by little, in well-heated Soya Soya Oil, stirring from time to time, until they are evenly browned. Remove the dumplings with a slotted spoon and place them on paper towels. Serve them with the Soya Homemade Mayonnaise and lemon sauce.
