Passion fruit mousse cake

Ingredients

For the Cake

  • 1 cup wheat flour (120 g)
  • 1 teaspoon of baking powder (5 g)
  • ½ teaspoon salt (2 g)
  • 1 egg
  • 1/3 cup Canola Soya Oil (80 ml)
  • 1/3 cup sugar (60 g)
  • ¼ cup passion fruit juice concentrate (45 ml)

For the mousse

  • 1 can of condensed milk (395 g)
  • 1 carton of UHT cream (200 g)
  • 1 ½ cup passion fruit juice concentrate (375 ml)
  • 1 packet of unflavored gelatin (12 g)

Finishing

  • Pulp of 1 passion fruit
  • ½ cup caster sugar (100 g)

Preparation Method

  1. In a bowl mix all the dry ingredients for the cake
  2. In a blender, beat the eggs, oil, sugar and passion fruit juice concentrate
  3. .
  4. Mix the liquids into the dry ingredients until you get a homogeneous dough
  5. Transfer to a greased and floured 20 cm diameter round pan
  6. .
  7. Bake in a preheated oven at 160°C for 30 minutes or until a toothpick comes out clean.
  8. After the cake has cooled, hydrate the unflavored gelatin according to the package
  9. .
  10. In a blender, beat all the remaining ingredients and finally mix in the gelatine
  11. .
  12. Put the mousse mixture on top of the cake in the mold, with the side closed with acetate.
  13. Refrigerate until the mousse sets
  14. .
  15. In a saucepan, add the passion fruit pulp and sugar, cook until thick
  16. .
  17. Finish on top of the mousse
